Wash the eggplants and cut in half. Richly sprinkle the cut side with salt and leave for about 30 minutes. After that time wash the eggplants one more time and place cut side up on a baking tray lined with parchment paper.
Grease the eggplants with oil well and put into an oven preheated to 200C. Bake for 40 minutes, once complete turn over and bake for a further 15-20 minutes, making sure they don’t scorch.
